Heat a large 12-inch skillet over medium heat. A cast iron skillet works wonderfully here, but any large skillet will do just fine.
In a small bowl, mix together 3/4 teaspoon salt, coriander, cinnamon, nutmeg, dried thyme, and pepper. Sprinkle this aromatic spice mixture generously over both sides of the chicken thighs.
Add a drizzle of oil to your hot skillet, swirling it around to coat evenly. Place the seasoned chicken thighs in the pan and cook for about 5 minutes on one side until golden brown. Flip them over and continue cooking for another 5 minutes until fully cooked through.
Without wiping out the pan, add butter to melt. Gently swirl it around as it melts before adding brown sugar, apple slices, and shallots along with the remaining salt. Cook while stirring occasionally until the apples begin to soften—this should take about five minutes. Pour in the apple cider next and let it cook down until slightly thickened for about five more minutes.
Remove from heat once everything is beautifully melded together. Spoon that lovely apple mixture over your chicken as you serve.
