Frito Cowboy Cabbage

A vibrant salad combining coleslaw with crunchy Fritos and zesty dressing, perfect for gatherings.

Ingredients
  

  • 1 bag coleslaw mix 16 ounces
  • 1 can black beans 15 ounces, rinsed and drained
  • 1.5 cups canned corn kernels drained
  • 1 medium jalapeño pepper seeded and finely diced
  • 1 small red bell pepper seeded and finely diced
  • 3 pieces green onions finely sliced
  • 0.25 cup fresh cilantro finely chopped
  • 1 tablespoon taco seasoning
  • 0.5 teaspoon ground cumin
  • 1 bag Chili Cheese Fritos 9.75 ounces, reserving a handful for topping
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 0.25 cup fresh lime juice about 2 limes
  • 2 tablespoons chipotle sauce from a can of chipotles in adobo

Method
 

  1. In a large bowl, combine coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin. Toss until well combined.
  2. In a medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  3. Pour the dressing over the salad mixture and gently stir to coat all ingredients evenly.
  4. Add all but a handful of Fritos to the salad mix and gently fold them in.
  5. Top the salad with the reserved handful of Fritos just before serving.
