Cucumber Dill Salad

Ingredients
  

  • ¾ cup Greek yogurt or plain full-fat yogurt
  • 1 ½ tablespoon extra virgin olive oil
  • 1 ½ tablespoon lemon juice
  • ¼ teaspoon garlic grated
  • ½ teaspoon fine salt
  • teaspoon black pepper
  • 1 ½ lb cucumbers sliced (2 long English cucumbers)
  • ½ medium red onion finely sliced
  • ¼ cup fresh dill chopped

Method
 

  1. Prepare the dressing by mixing Greek yogurt, olive oil, lemon juice, grated garlic, salt, and black pepper in a small bowl until smooth.
  2. Slice the red onion thinly and cut cucumbers in half lengthwise, then slice each half into approximately 3mm thick pieces.
  3. In a large salad bowl, combine the sliced cucumbers, red onion, and chopped dill. Pour the dressing over and toss gently until well coated.
  4. Serve immediately at room temperature or refrigerate until ready to serve.
