Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 2 large eggs
  • cup granulated sugar
  • ¼ cup light brown sugar packed
  • ¾ cup buttermilk or milk + 1 tbsp vinegar
  • ¼ cup unsalted butter melted
  • 2 teaspoons vanilla extract
  • cups peeled, diced tart apple such as Granny Smith
  • ¼ cup chopped pecans or walnuts optional
  • 1 cup powdered sugar for glaze
  • 2–3 tablespoons milk for glaze
  • ½ teaspoon vanilla extract for glaze
  • extra powdered sugar for dusting

Method
 

  1. Begin by peeling, coring, and dicing your apples into small chunks.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together eggs, granulated sugar, brown sugar, buttermilk, melted butter, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Gently fold in the diced apples and any nuts if you're using them.
  6. Preheat your waffle iron according to its instructions and lightly grease it.
  7. Spoon about ¼ cup of batter onto the preheated waffle iron for each donut and cook until golden brown and crisp.
  8. Once cooked, carefully transfer your waffle donuts to a wire rack to cool slightly.
  9. To make the glaze, whisk together powdered sugar, milk, and vanilla until smooth.
  10. Drizzle the glaze over each waffle donut and finish with a dusting of extra powdered sugar.
  11. Serve warm or at room temperature and enjoy!
