Ingredients
  

  • 2 cups cooked jasmine rice cold & day-old or sub with any white long grain rice
  • 1 green onion finely chopped
  • 2.5 tbsp regular soy sauce or light soy sauce, avoid dark soy sauce
  • 0.5 tbsp sesame oil
  • 4 large eggs beaten
  • 2 tbsp vegetable oil or any neutral oil

Method
 

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Pour in the beaten eggs and quickly stir-fry them until they take shape but remain moist.
  3. Add the cold cooked rice, breaking apart any clumps.
  4. Create an empty space in the pan, add more vegetable oil, and sprinkle in the green onions.
  5. Drizzle soy sauce and sesame oil along the edges of the pan and toss everything together.
