  • 23 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn kernels, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend, divided
  • 1 large bag (9.25 oz) Nacho Cheese Doritos, lightly crushed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, brown the ground beef with the diced onion and garlic until the meat is no longer pink; drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes; simmer for about 2-3 minutes.
  4. In a separate bowl, mix the cream of mushroom soup and sour cream until smooth.
  5. Layer half the beef mixture in the baking dish followed by half the cream mixture, one cup of cheese, and half of the crushed Doritos. Repeat layers ending with cheese on top.
  6. Cover with foil and bake for 15 minutes; remove foil and bake uncovered for an additional 10 minutes until bubbly.
  7. Let it rest for 5-10 minutes before serving.
