  • 1 Tablespoon instant espresso or coffee
  • 1 Tablespoon granulated sugar
  • 1/4 cup boiling water
  • 12 oz. white chocolate (for ganache)
  • 6 oz heavy cream
  • 2 sticks unsalted butter, softened
  • 16 oz packages cream cheese, softened
  • 1 Tablespoon espresso granules dissolved in 2 teaspoons vanilla extract
  • 6 to 6 1/2 cups powdered sugar

Instructions

  1. Preheat your oven to 325°F (163°C). Grease and flour three 8-inch round pans.
  2. Melt the white chocolate in warm milk until smooth; set aside.
  3. Whisk flour, baking powder, and salt together in a bowl.
  4. In a mixer, cream softened butter and sugar until fluffy, then add eggs one at a time followed by vanilla.
  5. Gradually mix in the dry ingredients alternating with the melted chocolate mixture.
  6. Divide batter evenly among the prepared pans and bake for 22-25 minutes or until a toothpick comes out clean.
  7. Cool layers before frosting with white chocolate ganache mixed with cream cheese.
