  • 1/2 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup chocolate chips

Instructions

  1. In a mixing bowl, whisk together melted coconut oil, pumpkin puree, brown sugar, and white sugar until smooth.
  2. Add all-purpose flour, pumpkin pie spice, salt, and baking soda to the bowl. Mix until a soft dough forms, then fold in half of the chocolate chips.
  3. Cover the dough with plastic wrap and chill in the refrigerator for at least one hour (or overnight for best results).
  4. Preheat your oven to 325°F (163°C) and prepare a baking tray with parchment paper.
  5. Scoop about 1.5 tablespoons of dough onto the prepared tray, leaving space between each cookie. Flatten slightly and add extra chocolate chips on top.
  6. Bake for approximately 12-14 minutes until edges are golden but centers remain soft.
  7. Allow cookies to cool on the tray for about 5-10 minutes before transferring to a wire rack.
