  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion, diced
  • 3 large carrots, cut into chunky pieces
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 1 medium rutabaga, cut into chunky pieces
  • 4 large potatoes, cut into chunks
  • ¼ head green cabbage, shredded
  • 9 oz vegan beef or portobello mushrooms (optional)
  • 330 ml vegetable stock
  • ¼ cup soy sauce (or Tamari)
  • Fresh herbs: thyme and rosemary

Instructions

  1. In a large pot over high heat, add oil and sear the vegan beef or mushrooms until golden brown. Set aside.
  2. Lower heat to medium; sauté onions, carrots, celery until softened. Add garlic and cook for another minute.
  3. Sprinkle flour over vegetables and stir well; cook for a minute.
  4. Gradually pour in vegetable stock while stirring to avoid lumps.
  5. Add rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, and fresh herbs. Stir to combine.
  6. Bring to a boil; reduce heat and simmer uncovered for about 45-50 minutes until potatoes are tender.
  7. Stir in seared vegan protein before serving.
