  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a small bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press about 1 tablespoon into each liner for the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, heavy cream, vanilla bean seeds, and vanilla extract.
  4. Distribute the cheesecake batter evenly among the liners, filling them three-quarters full. Bake for 20–25 minutes until set but slightly jiggly in the center.
  5. Allow cooling to room temperature before refrigerating for at least two hours.
  6. Before serving, sprinkle about 1 teaspoon of sugar on top of each cupcake and caramelize with a kitchen torch.
