  • 64 oz chicken or vegetable broth
  • 3 tbsp olive oil
  • 1 medium onion (minced)
  • 1 medium carrot (grated)
  • 3 large potatoes (cubed)
  • 4 cups spinach (chopped)
  • 1 zucchini (cubed)
  • 3 tbsp lemon juice
  • 4 hard-boiled eggs (cubed, optional)
  • Fresh parsley or dill (for garnish)

Instructions

  1. In a large pot, bring the chicken or vegetable broth to a boil. Add cubed potatoes and reduce heat to simmer until cooked through.
  2. In a skillet, heat olive oil over medium heat. Sauté minced onion and grated carrot until softened, about 10 minutes.
  3. Once potatoes are tender, add sautéed vegetables, zucchini, and spinach to the pot. Simmer for another 5-7 minutes.
  4. Stir in lemon juice and hard-boiled eggs if using. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh herbs and a dollop of sour cream if desired.
