  • 2 cups granulated sugar
  • ½ cup cocoa powder
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • ½ tsp salt
  • ½ cup whole milk
  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 100g dark chocolate, finely chopped
  • 130g white chocolate, finely chopped
  • 2 cups heavy cream, divided

Instructions

  1. Preheat oven to 350°F (180°C). Grease and line two 8-inch round cake pans.
  2. In a bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, milk, sour cream, oil, and vanilla. Combine wet ingredients with dry ingredients until smooth.
  4. Dissolve espresso powder in hot water and mix it into the batter until well combined.
  5. Pour batter evenly into prepared pans and bake for about 35 minutes or until toothpick comes out clean. Let cool completely.
  6. Prepare mousses by heating cream and combining with yolks/sugar/cornstarch mixture before mixing with melted chocolates.
  7. Layer the cooled cakes with dark mousse followed by white mousse, chilling between layers.
  8. Finish with chocolate ganache and refrigerate until ready to serve.
