  • 2 tablespoons fresh basil, torn
  • 2 (400g) cans chopped tomatoes
  • 500ml chicken stock (or vegetable stock for a vegetarian option)
  • ½ teaspoon sugar
  • 50ml single cream
  • 125g dried breadcrumbs
  • ½ teaspoon baking powder
  • 75g mature cheddar, grated
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 1 egg
  • 50g cream cheese

Instructions

  1. Heat olive oil and butter in a large pot over low heat. Add chopped onion and sweet potato; sauté for 5–10 minutes until softened.
  2. Stir in minced garlic and ground cinnamon; cook for an additional minute. Add torn basil, canned tomatoes, and chicken stock; bring to a boil then simmer for 20 minutes.
  3. For dumplings, mix breadcrumbs, baking powder, cheddar cheese, mustard powder, oregano, egg, and cream cheese in a bowl until combined; form into eight balls.
  4. Blend the soup until smooth; season with sugar, salt, and pepper to taste. Carefully place dumplings on top without stirring; simmer gently for 10 minutes until cooked through.
  5. Serve warm with garnishes like fresh basil or extra cheese.
