  • 500 g butternut squash, peeled and cubed
  • 4 cloves garlic, peeled
  • 1 yellow onion, finely sliced
  • 2 tbsp olive oil
  • 500 g shelf-stable gnocchi
  • 50 g grated parmesan
  • Juice of 1 lemon
  • 50 g turkey strips, chopped
  • 1 ball of fresh mozzarella, torn

Instructions

  1. Preheat the oven to 180ºC.
  2. Toss butternut squash, onion, and garlic with rosemary and olive oil on a baking tray.
  3. Roast for about 30 minutes until golden and tender.
  4. Blend roasted vegetables into a smooth purée.
  5. In a pan, heat olive oil and cook turkey strips until crispy.
  6. Mix purée with water and milk in the pan; stir in gnocchi and simmer for 8-10 minutes until tender.
  7. Incorporate parmesan cheese and lemon juice; add half of the crispy turkey strips.
  8. Top with mozzarella pieces and broil for about 5 minutes until melted.
  9. Garnish with remaining turkey strips, cracked pepper, walnuts, and parsley before serving.
