  • 500 g butternut squash (peeled and chopped)
  • 4 cloves garlic (peeled)
  • 1 yellow onion (finely sliced)
  • 2 tbsp olive oil
  • 500 g shelf-stable gnocchi
  • 50 g grated parmesan
  • 75 ml milk
  • 50 g turkey strips (chopped)
  • 1 ball fresh mozzarella (torn into pieces)
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 180ºC.
  2. Toss the butternut squash, onion, and garlic with rosemary and olive oil on a baking tray. Roast for about 30 minutes until golden and tender.
  3. Blend the roasted vegetables into a smooth purée, adding water if needed for consistency.
  4. In a frying pan, heat olive oil and cook turkey strips until crispy.
  5. Return the purée to the pan, add water and milk to create a sauce, then gently simmer the gnocchi for about 8-10 minutes until tender.
  6. Stir in parmesan cheese and lemon juice; add half of the turkey strips.
  7. Top with mozzarella pieces and grill for about 5 minutes until melted.
  8. Garnish with remaining turkey strips, walnuts, and serve hot.
