  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • Olive oil, salt, and pepper to taste

Instructions

  1. Cook rice according to package instructions using chicken broth for added flavor. Fluff and set aside.
  2. In a skillet over medium heat, heat olive oil and brown the ground meat thoroughly.
