  • 1 cup water
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup butter (melted)
  • 1 cup brown sugar
  • 23 teaspoons salt (or to taste)
  • ½ cup heavy cream (or milk)
  • ½ cup brown sugar (for topping)
  • ½ cup flour
  • â…“ cup melted butter (for topping)
  • 1 cup chopped pecans
  • 34 cups mini vegan marshmallows

Instructions

  1. Cook sweet potatoes until tender, using either boiling or a slow cooker.
  2. Preheat your oven to 375°F (190°C).
  3. Mash cooked sweet potatoes until smooth; mix in eggs, vanilla extract, melted butter, brown sugar, salt, and heavy cream/milk.
  4. Spread the mixture into a greased baking dish.
  5. In another bowl, combine brown sugar, flour, melted butter, and chopped pecans; sprinkle over sweet potato mixture.
  6. Bake uncovered for 20-25 minutes until topping is golden brown.
  7. Add mini marshmallows on top and bake an additional 5-7 minutes until puffy.
