  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup butter (melted)
  • 1 cup brown sugar
  • 23 teaspoons salt (to taste)
  • ½ cup heavy cream (or milk)
  • ½ cup brown sugar (for topping)
  • ½ cup flour
  • â…“ cup melted butter (for topping)
  • 1 cup chopped pecans
  • 34 cups mini vegan marshmallows

Instructions

  1. Cook sweet potatoes in water until tender. Drain and mash until smooth.
  2. Preheat oven to 375°F (190°C). Combine mashed sweet potatoes with eggs, vanilla, melted butter, brown sugar, salt, and heavy cream.
  3. Spread the mixture evenly in a greased baking dish.
  4. In a separate bowl, mix brown sugar, flour, melted butter, and pecans for the topping. Sprinkle over sweet potato base.
  5. Bake uncovered for 20-25 minutes until golden brown.
  6. Add vegan marshmallows on top and bake for an additional 5-7 minutes until puffy.
