  • 1 jalapeno pepper, seeded and minced
  • ½ cup mayonnaise

  • Juice of 1 lime
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and let cool.
  2. In a bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  3. In a large mixing bowl, combine cooked pasta with corn kernels, diced bell pepper, red onion, and jalapeno. Pour the dressing over and toss until well coated.
