  • 1 lb vanilla cream cookies
  • 6 tablespoons melted butter
  • 1 small box (3.3 oz) strawberry vegan gelatin
  • 1 cup boiling water
  • 2 bricks (8 oz each) softened cream cheese
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 10 strawberry wafers

Instructions

  1. Prepare the crust by processing 26 vanilla cream cookies into crumbs and mixing with melted butter. Press into the bottom of a greased 10" springform pan. Freeze for 15 minutes.
  2. Combine boiling water with vegan gelatin until dissolved; set aside to cool.
  3. Beat softened cream cheese and granulated sugar until smooth. In another bowl, whip heavy cream with powdered sugar to stiff peaks.
  4. Fold half of the whipped cream into the cream cheese mixture, followed by half of the cooled gelatin. Pour half over the crust and freeze for an additional 15 minutes.
  5. Layer the remaining cream cheese mixture on top, followed by the rest of the gelatin mixture. Crush remaining cookies and sprinkle on top.
  6. Chill in the refrigerator for at least four hours before serving.
