- 2 cups fresh spinach (sautéed and chopped)
- 8 oz low-moisture mozzarella (cut into small cubes)
- 3 cloves garlic (minced)
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
- Salt
- Black pepper
- Olive oil (for searing)
- Sauté minced garlic in olive oil until fragrant. Add spinach until wilted, then cool and chop finely.
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, salt, pepper, egg, and prepared spinach. Mix gently until combined.
- Form meatballs by flattening a portion of the mixture in your palm, placing a cube of mozzarella in the center, and sealing it.
- Heat olive oil in a skillet over medium heat and sear meatballs for about 2-3 minutes per side until golden brown.
- Cook through by covering the skillet on low heat for an additional 5-7 minutes or bake in a preheated oven at 375°F (190°C) for about 10-12 minutes.
