  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 (8.5 oz) box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef. Add diced onion and minced garlic; sauté until fragrant.
  3. Stir in corn, black beans, diced tomatoes, chili powder, cumin, and salt. Simmer for 5 to 7 minutes.
  4. In a bowl, combine the corn muffin mix, egg, and milk; stir until just mixed.
  5. Pour the beef mixture into a greased baking dish and spread the cornbread batter on top.
  6. Bake for 25 to 30 minutes until golden brown.
  7. Sprinkle cheese over the top and bake an additional 3 to 5 minutes until melted.
  8. Garnish with fresh cilantro if desired.
