  • 4 large organic sweet potatoes
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked + drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Peel and cube sweet potatoes; boil in water for 15-20 minutes until fork-tender. Drain well.
  2. In a mixing bowl, mash sweet potatoes with olive oil, almond milk, cinnamon, nutmeg, vanilla extract, and brown sugar until smooth.
  3. Preheat the oven to 350°F (175°C). Layer half of the sweet potato mixture in a greased baking dish, followed by half of the soaked raisins and cubed butter. Repeat layers.
  4. Top with vegan marshmallows and chopped pecans; drizzle with maple syrup.
  5. Bake for 45 minutes until bubbly and golden. Let cool slightly before serving.
