  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 tablespoons unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Cook sweet potatoes in a large pot of boiling water until tender, then drain.
  2. In the pot, mash the sweet potatoes with olive oil, almond milk, vanilla extract, butter, brown sugar, and spices until smooth.
  3. Preheat oven to 350°F (175°C). Spread mashed mixture in a greased baking dish. Top with raisins, marshmallows, and pecans; drizzle with maple syrup.
  4. Bake for about 90 minutes until golden brown on top.
