  • 4 large organic sweet potatoes, peeled and cubed
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Start by boiling the peeled and cubed sweet potatoes in salted water until fork-tender. Drain well.
  2. In the same pot, combine the sweet potatoes with olive oil, almond milk, vanilla extract, butter, brown sugar, cinnamon, nutmeg, and allspice until creamy.
  3. Gently fold in the soaked raisins and vegan marshmallows.
  4. Transfer the mixture to a greased baking dish and top with raw pecans and an extra drizzle of maple syrup.
  5. Bake in a preheated oven at 350°F (175°C) for about 90 minutes or until golden.
