  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Wash and dry the cucumbers, then chop them in half and gently smash each piece with the flat side of a knife. Cut into 1-inch pieces.
  2. Peel and chop the avocado into bite-sized pieces; add to the bowl with the smashed cucumbers.
  3. Mix in crumbled feta, chopped pistachios, dill, and chives.
  4. In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad mixture and toss gently until well combined. Serve immediately or chill for later.
