  • 1 sheet puff pastry, thawed
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper, to taste
  • 1/4 cup dry white apple vinegar
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 1 teaspoon Dijon mustard
  • 2 large eggs, divided
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet over medium heat, melt butter with olive oil. Sauté the onion until soft.
  3. Add garlic and mushrooms; cook until browned and moisture evaporates.
  4. Stir in thyme, salt, pepper, and optional apple vinegar; cook until liquid absorbs.
  5. Mix in cream cheese and cheeses until creamy; remove from heat.
  6. Let cool slightly before adding one beaten egg and mixing well.
  7. Unroll puff pastry and cut diagonal strips along both sides for braiding.
  8. Place filling in center and braid strips over the filling alternately.
  9. Transfer to the baking tray, brush with remaining beaten egg, and bake for 20–22 minutes until golden brown.
  10. Cool slightly before garnishing with parsley and serving warm.
