  • 1 pound chicken or turkey sausage
  • 5 tablespoons unsalted butter
  • 21/4 cups mirepoix (diced carrots, celery, onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  1. Sauté the sausage in a large pot over medium-high heat until browned; transfer to a plate.
  2. In the same pot, melt one tablespoon of butter and sauté the mirepoix for 5–7 minutes until soft.

  4. In another pot, melt remaining butter and whisk in flour; gradually add milk to thicken.
  5. Combine the creamy mixture with the soup; stir in cheese until melted.
  6. Return the sausage to the pot and mix well before serving.
