  • 1 cup sour cream, ideally room temp
  • ¾ cup cocoa powder, Dutch Processed preferred
  • 2 tsp instant coffee
  • ¾ cup boiling water
  • 1 cup granulated sugar for frosting
  • 5 tbsp unsalted butter
  • ½ cup heavy cream, warmed up
  • ¾ tsp salt
  • 1 ½ tsp vanilla
  • 200g dark chocolate (70%)
  • 8 oz cream cheese, room temp
  • â…“ cup cocoa powder
  • 1 cup powdered sugar
  • ½ cup salted caramel sauce
  • 1 cup heavy cream, cold

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cake pans with grease and parchment paper.
  2. In a large bowl, whisk together all-purpose flour, baking powder, baking soda, granulated sugar, light brown sugar, cocoa powder, and salt.
  3. In another bowl, combine eggs, vegetable oil, buttermilk, sour cream, and instant coffee. Gradually add boiling water while mixing.
  4. Combine wet and dry ingredients gently until just mixed; avoid over-mixing.
  5. Bake in prepared pans for 30-35 minutes or until a toothpick comes out clean. Cool completely before frosting.
  6. For the frosting, melt sugar and butter until golden, then stir in warm cream and add dark chocolate until smooth.
  7. Assemble the cake with layers of salted caramel sauce and frosting.
