  • 3 tbsp extra virgin olive oil
  • 1 yellow onion
  • 4 garlic cloves
  • 1 cup fresh basil
  • 2 cups chicken stock
  • 2/3 cup heavy cream (or coconut milk for a dairy-free option)

Instructions

  1. Preheat your oven to 375°F. Arrange sliced tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for about an hour until caramelized.
  2. In a large pot, heat olive oil or butter over medium-high heat. Sauté diced onion until translucent, about 5 minutes.
  3. Add minced garlic and thyme, sautéing until fragrant.
  4. Stir in crushed tomatoes, chopped basil, and sugar; simmer for about 10 minutes.
  5. Pour in chicken stock and add roasted tomatoes; simmer for another 30 minutes.
  6. Blend until smooth using an immersion blender or standard blender. Return to pot.
  7. Stir in heavy cream (or coconut milk) before serving.
