  • 8 oz block of feta cheese (drained from brine)
  • 1/4 cup plain Greek yogurt
  • 1 cup canned pumpkin puree (unsweetened)
  • 12 Tbsp honey (plus extra for drizzling)
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Black pepper
  • Chopped walnuts (optional)
  • Crusty toasted bread or crackers

Instructions

  1. In a food processor, combine drained feta and Greek yogurt. Blend until smooth.
  2. Add pumpkin puree, honey, thyme, and black pepper. Blend again until well combined.
  3. Transfer to a bowl, cover, and chill in the fridge for 30 to 60 minutes.
  4. Before serving, garnish with walnuts, fresh thyme, an extra drizzle of honey, and cracked pepper.
  5. Serve with toasted bread or assorted crackers.
