  • 1 3/4 cups all purpose flour

  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup unsalted butter, melted
  • 1 1/4 cups granulated white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk, at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. For the streusel topping, mix cold butter, brown sugar, flour, and salt in a bowl until crumbly.
  3. In a large bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. In another bowl, combine melted butter, granulated sugar, eggs, vanilla extract, pumpkin puree, and buttermilk until smooth.
