  • 110g coconut oil
  • 170g pumpkin puree
  • 200g all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100g powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a springform pan.
  2. In a mixing bowl, beat eggs and sugar until light and fluffy. Stir in coconut oil, pumpkin puree, vanilla extract, and maple syrup.
  3. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually fold this into the wet mixture until just combined.
  4. Pour batter into the prepared pan and bake for about 25 minutes. Cover loosely with foil and continue baking for another 20 minutes or until a toothpick comes out clean.
  5. For the glaze, mix powdered sugar with milk and maple syrup until smooth. Drizzle over cooled cake before serving.
