  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 2 large eggs (or substitute)
  • 1 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 1/2 cup unsalted butter, melted
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 4 cups powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar, packed
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the yellow cake mix, egg, melted butter, pumpkin puree, and vanilla extract until well combined.
  3. In another bowl, beat the cream cheese and eggs until smooth. Then add remaining pumpkin puree, melted butter, spices, and mix well.
  4. Pour half the cake batter into the prepared pan. Spread the gooey filling on top and dollop the remaining batter over it.
  5. Bake for 40-45 minutes until golden brown; check doneness with a toothpick.
  6. Allow to cool slightly before preparing the frosting by mixing cream cheese, brown sugar, unsalted butter, powdered sugar, and vanilla extract until creamy. Spread over cooled cake.
