  • 1 cup canned pumpkin puree
  • ½ cup white granulated sugar
  • ½ cup light brown sugar (packed)
  • ½ cup vegetable oil
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. Add eggs, pumpkin puree, white and brown sugars, and vegetable oil to the dry mix. Stir until just combined.
  4. Gently fold in chocolate chips.
  5. Spoon the batter into a greased muffin tin and bake for about 16 minutes or until a toothpick comes out clean.
  6. Let cool for three minutes before enjoying.
