  • 2 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ½ cup canola oil
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs
  • 1¼ cup canned pumpkin puree
  • 2 tsp vanilla extract
  • 4 oz cream cheese
  • 4 tbsp unsalted butter
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, cloves, cardamom, and salt.
  3. In another bowl, whisk together the canola oil, granulated sugar, light brown sugar, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet mixture. Stir gently until just combined.
  5. Pour the batter into a greased 9×5 loaf pan. Bake for about 55 minutes or until a toothpick inserted into the center comes out clean.
  6. Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
  7. While waiting for your bread to cool completely, beat together the cream cheese and butter until creamy. Add vanilla extract and powdered sugar gradually while mixing.
  8. Once your pumpkin bread is cool, spread the cream cheese frosting generously on top. Slice and serve.
