  • 1 tbsp olive oil
  • 400g chicken or turkey sausage
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic
  • 1/2 tsp dried thyme
  • 3 tbsp plain/all purpose flour
  • 1 litre chicken or vegetable stock
  • 2 bay leaves
  • 100g wild rice
  • 3 potatoes (medium, peeled and cut into chunks)
  • 375ml light cream
  • Salt to taste

Instructions

  1. In a soup pot, heat olive oil over medium heat. Remove sausage from its casing and add to the pot, cooking until golden brown. Transfer cooked sausage to a plate, leaving some fat in the pot.
  2. In the same pot, sauté chopped onion, celery, and carrots over low heat for about 10 minutes until softened. Add minced garlic and thyme; cook for another 30 seconds. Sprinkle flour over the mixture and stir until combined.
  3. Gradually pour in chicken stock while stirring to loosen the roux. Add bay leaves and wild rice; bring to a simmer for about 30 minutes.
  4. Add cubed potatoes and continue cooking for another 15 minutes until tender. Stir in light cream and season with salt before serving.
