  • 8 ounces semisweet or bittersweet chocolate, chopped
  • ¼ teaspoon peppermint extract
  • 3 candy canes, crushed
  • finely crushed candy canes
  • red sanding sugar
  • cocoa powder

Instructions

  1. In a medium saucepan over low-medium heat, bring the heavy cream and unsalted butter to a gentle boil.
  2. Pour the hot mixture over the chopped chocolate in a medium bowl and let it sit for about 5 minutes.
  3. Stir until smooth, then mix in the peppermint extract and crushed candy canes.
  4. Refrigerate the mixture until firm (1 to 2 hours).
  5. Scoop the mixture into balls using a tablespoon cookie scoop and roll them in your choice of toppings.
  6. Place on a parchment-lined baking sheet and return to the refrigerator until set (another hour or two).
