  • 3 (8-oz.) blocks cream cheese, softened
  • 1 c. packed brown sugar
  • 3 large eggs
  • 1/4 c. sour cream
  • 2 tbsp. all-purpose flour
  • 1 tsp. pure vanilla extract
  • 1/4 tsp. kosher salt
  • 1 sleeve graham crackers, finely crushed
  • 5 tbsp. butter, melted
  • 1/4 c. packed brown sugar
  • Pinch of kosher salt
  • 4 tbsp. butter
  • 1/2 c. packed brown sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 c. heavy cream
  • 1 3/4 c. whole or chopped pecans

Instructions

  1. Preheat oven to 325°F and grease an 8" or 9" springform pan.
  2. In a large bowl, beat softened cream cheese and brown sugar until smooth. Add eggs one at a time, mixing in sour cream, flour, vanilla extract, and salt until combined.
  3. For the crust, mix crushed graham crackers with melted butter, brown sugar, and salt; press into the bottom of the pan.
  4. Pour cheesecake filling over the crust. Bake for about 1 hour and 30 minutes until slightly jiggly in the center. Turn off oven and let cool for an hour with the door ajar.
  5. Chill in the refrigerator for at least 5 hours or overnight.
  6. For the topping, melt butter with brown sugar in a skillet; stir in cinnamon, heavy cream, and pecans until coated.
  7. Serve chilled and enjoy!
