  • 1 teaspoon vanilla extract

  • ½ cup granulated sugar (for topping)
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter (cut into small cubes)
  • ¼ cup boiling water
  • Coarse sugar for topping (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. Wash and slice the peaches, removing the pit. Peel if preferred.
  3. In a large bowl, combine sliced peaches with ¾ cup sugar, lemon juice, cornstarch, vanilla extract, and let sit for about ten minutes.
  4. In another bowl, whisk together flour, remaining sugar, baking powder, and salt. Add cold butter and mix until crumbly.
  5. Stir in boiling water until a thick dough forms.
  6. Pour peach filling into a greased baking dish and dollop the topping over the peaches.
  7. Sprinkle coarse sugar on top if desired and bake for 38 to 42 minutes until golden brown.
