  • 2 sheets puff pastry
  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • 2 lemons (zest only)
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme (minced)
  • 1 egg (for wash)

Instructions

  1. Prepare the blackberry jam by cooking blackberries with water, lemon juice, and sugar in a saucepan over medium heat for about 20-30 minutes until thickened. Smash the berries as they cook and let cool.
  2. Thaw puff pastry sheets for 20-25 minutes, then roll into rectangles on a floured surface.
  3. Spread half of the goat cheese on each sheet and top generously with cooled blackberry jam. Cut into strips, fold in half, twist gently, and place on a baking tray.
  4. Brush with egg wash and sprinkle with lemon-thyme sugar. Bake at 400°F for 16-18 minutes until golden brown.
