  • 2 lbs red potatoes
  • 1 stick butter (1/2 cup)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) with a baking pan containing 1 stick of butter inside to melt as the oven heats.
  2. While waiting, wash and cut the red potatoes in half, scoring each half lightly to ensure even cooking.
  3. In a mixing bowl, combine grated Parmesan cheese, 2 tablespoons of herb seasoning, salt, and black pepper.
  4. Once the butter has melted, place the halved potatoes cut side down in the pan. Sprinkle half of the seasoning mixture over them and spray lightly with nonstick cooking spray before adding the remaining seasoning on top.
  5. Bake uncovered for about 40 minutes until tender and golden brown.
