  • 1 stick butter (1/2 cup)
  • 2 lbs red potatoes (washed)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) and place 1 stick of butter into a 9×13 baking pan to melt while the oven heats.
  2. Wash and cut the red potatoes in half, scoring each half to enhance flavor absorption.
  3. In a bowl, mix together Parmesan cheese, 2 tablespoons of herb seasoning, salt, and black pepper.
  4. Once the butter has melted, remove the pan from the oven and sprinkle half of the seasoning mixture on the bottom. Place potato halves cut side down in the pan.
  5. Spray the tops of potatoes with nonstick cooking spray and sprinkle with remaining herb seasoning for extra crispiness.
  6. Bake uncovered for about 40 minutes or until golden brown and tender.
