  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken sausage and cook until browned; remove from pot while leaving drippings.
  2. In the same pot, sauté diced onion and minced garlic until soft (about 3–4 minutes).
  3. Stir in drained diced tomatoes, chicken stock, dried basil, and oregano; return sausage to pot. Simmer for about 10 minutes.
  4. Add ditalini pasta and cook until al dente (8–10 minutes).
  5. Reduce heat slightly; stir in heavy cream and freshly grated Parmesan cheese until melted and combined.
  6. Season with salt and pepper to taste; garnish with fresh parsley before serving.
