  • 1 cup ricotta cheese
  • 6 sheets phyllo pastry
  • ¼ cup melted butter or olive oil
  • ¼ cup honey
  • ½ tsp red chili flakes

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix crumbled feta and ricotta until smooth; if using thyme, add it now.
  3. Cut phyllo sheets in half lengthwise, keeping them covered with a damp towel.
  4. Brush each phyllo strip lightly with melted butter or olive oil. Place 1 tablespoon of the cheese mixture at one end, fold in the sides, and roll tightly to seal.
