  • 1 cup dry orzo pasta
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • juice from ½ lemon
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 tsp dried thyme
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • freshly ground black pepper (for serving)

Instructions

  1. Season salmon fillets with garlic powder, sweet paprika, salt, and black pepper.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sear the salmon for 3-4 minutes on each side until cooked through. Remove from skillet.
  3. In the same skillet, sauté chopped onion and minced garlic until fragrant. Add thyme and orzo; toast for 1 minute.
  4. Pour in chicken broth, bring to a boil, then reduce heat to simmer for about 8 minutes until orzo is nearly tender.
  5. Stir in baby spinach until wilted, then mix in lemon juice and Parmesan cheese.
  6. Return salmon to skillet; simmer gently for an additional 2-3 minutes before serving.
