  • 1 lb chicken or turkey sausage, sliced into rounds
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet over medium heat, warm olive oil. Add sliced sausage rounds and cook until browned (4–5 minutes). Remove from the pan.
  2. In the same skillet, sauté diced onion and bell pepper until softened (3–4 minutes). Add minced garlic and cook for another 30 seconds.
  3. Stir in smoked paprika and black pepper, then add uncooked rice. Toast the rice for about 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; stir well. Return sausage to the pan.
  5. Bring to a boil, cover, reduce heat to low, and simmer for 20–22 minutes until rice is tender.
  6. Let rest for 5 minutes before fluffing with a fork. Garnish with chopped parsley.
