  • 1 pound Orzo Pasta
  • 1.5 pounds Shrimp, peeled and deveined
  • 4 cups Chicken Broth
  • ½ cup White Apple Vinegar (optional)
  • 1 medium Yellow Onion, diced
  • 4 cloves Garlic, minced
  • 1 cup Parmesan Cheese, grated
  • ½ cup Heavy Cream
  • 2 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 1 Lemon, juiced and zested
  • ¼ cup Fresh Parsley, chopped
  • ¼ teaspoon Red Pepper Flakes (optional)
  • Salt and Black Pepper, to taste

Instructions

  1. In a large oven-safe skillet, heat olive oil and butter over medium heat. Add diced onion and cook until softened (about 5 minutes). Stir in minced garlic and optional red pepper flakes; sauté for another minute.
  2. Add orzo pasta to the skillet and toast for 1-2 minutes. If using white apple vinegar, add it now and deglaze the pan.
  3. Pour in chicken broth along with lemon zest, salt, and pepper. Bring to a boil then reduce to low; cover and simmer for about 10-12 minutes until most liquid is absorbed.
  4. Gently stir in shrimp and cover again; cook for another 3-5 minutes until shrimp are pink and opaque.
  5. Remove from heat and stir in Parmesan cheese and heavy cream until creamy.
  6. Finish with fresh lemon juice and parsley before serving hot.
