  • 2 pounds of pot roast (beef)
  • 2 russet potatoes, chopped
  • 1 bag frozen seasoning blend (or chopped onions)
  • 1 bag frozen peas
  • 1 bag frozen green beans
  • 1 bag frozen corn
  • 4 large carrots, chopped
  • 32 oz beef broth
  • 2 cans tomato soup (10.75 oz each)
  • Salt and pepper to taste

Instructions

  1. Season the pot roast with salt and pepper. Place in a slow cooker with half the beef broth and cook on low for about 10 hours until tender.
  2. In a large pot, sauté the carrots and seasoning mix in oil until tender.
  3. Shred the beef and add it to the pot along with chopped potatoes, remaining frozen veggies, leftover broth, tomato soup, water, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about an hour.
  5. Serve hot with crusty bread or crackers.
