  • 8 oz egg noodle pasta
  • 1.5 lbs cremini mushrooms
  • 1 onion
  • 3 cloves garlic
  • 1/2 cup dry white grape juice
  • 1.5 cups mushroom stock
  • 2 tablespoons flour
  • 1/2 cup sour cream (or Greek yogurt)
  • 23 sprigs thyme
  • 2 teaspoons dijon mustard
  • 1 teaspoon smoked paprika
  • chopped fresh parsley or chives
  • sea salt & black pepper

Instructions

  1. Cook the egg noodles according to package directions until al dente. Drain and set aside.
  2. In a skillet, melt 1 tablespoon of butter over medium heat and sauté halved cremini mushrooms until browned. Remove from skillet.
  3. Add another tablespoon of butter, then cook sliced onions and crushed garlic until tender.
  4. Deglaze the pan with dry white grape juice, scraping up any bits from the bottom.
  5. Mix flour with mushroom stock until smooth; pour into skillet along with cooked mushrooms, thyme, mustard, and paprika.
  6. Stir in sour cream (or Greek yogurt) after tempering it with some hot liquid from the skillet.
  7. Adjust seasoning with sea salt and black pepper before serving over noodles.
